My Favorite Breakfast

Quinoa Oatmeal with PB2 and Maple Syrup


  • 1 cup Steel Cut Oats
  • 1/2 cup Quinoa
  • 1 tsp Coconut Oil
  • 4 cups Water
  • 1/2 cup Almond Milk
  • 8 tbsp PB2
  • 1 tbsp Maple Syrup

Cooking Directions

  1. Bring water to a boil.
  2. In a large sauce pan, heat coconut oil over medium heat. Add steel cut oats, and toast for 2 to 3 minutes.
  3. Rinse Quinoa, add to sauce pan along with boiling water.
  4. Bring the mixture up to a boil. Once boiling turn down heat and let simmer for 25 minutes.
  5. Turn off heat, add almond milk, PB2, and Maple Syrup.
  6. Serves 4

Peanut butter can be substituted for PB2, but I prefer the taste with less calories. I’ve been dividing it into four containers and eating it throughout the week. I’ve also experimented with mixing it with a fruit cup instead of the PB2 and maple syrup but the sweetness just wasn’t there for me.
